Pueblo Jalisco's Bar sits right off Highway 78 in Cibolo, the kind of neighborhood spot families return to again and again. The dining room has plenty of space to spread out, and with doors open from 6 AM to 10 PM every single day of the week — plus a drive-thru for when there's no time to sit down — there's rarely a bad time to stop by.
The kitchen leans into Tex-Mex classics done right: chips and salsa come with a complimentary cup of fideo before the meal even starts, the carne guisada is tender enough to melt on the tongue, and the tortilla soup arrives in a bowl big enough to share. Regulars also order the Mexican Burger — pressed ham, white cheese, and avocado on a hot griddled bun — alongside fried fish and fries, al pastor street tacos, and golden chalupas.
Past the dining room, a separate bar area gives the place its name — a spot for draft beer, a cold margarita, and conversation with bartender Elvia, whose outgoing personality and standout drinks have regulars asking for her by name. Waitstaff are warm, bilingual in Spanish and English, and quick with a refill, making every visit feel like a neighborhood tradition.
